Nigerian buns is an absolutely delightful street snack. It is crunchy and easy to make but it’s kinda tricky too; if the dough is too sticky or overworked, the buns won’t turn out well.
This snack is also adaptable; there’s a homemade buns and the street version. Both types are quite tasty. But while the homemade version contains such ingredients as eggs, margarine and milk, one or two of the above mentioned is often omitted in the street version. What we’re preparing today is the homemade version. I’m sure you’ll love it.

Ingredients
3 cups of all purpose flour
2 eggs
Margarine (optional)
1/2 cup of sugar
1/4 teaspoon of nutmeg
Milk
A pinch of salt
Vegetable oil
How to Prepare
The all-in-one method is what we use for Nigerian buns. This basically means that all the ingredients are added at once, without ceremony.
So, get a clean bowl, add flour, sugar, baking powder, nutmeg, eggs, salt, margarine and milk.
Mix the ingredients thoroughly but do not overwork the batter. A smooth and stretchy dough should be the reward of your efforts.
Cover the dough with a clean towel and leave it alone for 5 minutes.

Add vegetable oil to a clean pot. Heat the oil. Please note that Nigerian buns is deep fried. Therefore, for your buns to be well cooked, the temperature of the oil should be just right. If the oil is not hot enough, the buns will be greasy. If it is too hot, the buns will burn.
Thus, to be on the safe side, do a heat test before you start frying. Drop a tiny batter into the oil. If it sinks to the bottom and then rises and stays in the centre of the oil before fully rising to the top, the oil is ready to use.
If the batter rises too quickly, Â know that the oil is too hot. Turn off the heat. Allow the oil to cool a bit. Â Once the oil is ready, make balls from the batter and drop them into the oil.
Make sure you are frying on medium heat as this will allow the buns to cook well. Â
Fry till  golden brown. Scoop the buns into a paper lined sieve.
If the batter is still remaining, reduce the heat, make balls out of the batter and fry till golden brown.
Nigerian buns can be eaten alone. It can also be served hot or cold with any beverage of your choice.
