  I was nine when I first tasted this snack. My siblings and I were spending the long vacation with our aunt who lived in Lagos. For the duration of our visit, Kokoro was my aunt’s ife afia (market gift). At first, we thought it was kulikuli but the taste was different.

Kokoro is a crunchy snack made from cornmeal. It is either spicy or plain but it’s always tasty. I prefer the spicy one and that’s what we’ll be making today. Ingredients A Cup of Corn Meal A Pinch of Grated Ginger A Teaspoon of Chili Pepper A Pinch of Salt Vegetable Oil 2 Tablespoons of Sugar

How To Prepare

Put a cup of water in a pot and bring it to a boil. Divide the cornmeal into two equal parts. Pour one part into a clean, dry bowl. Add the other dry ingredients and the grated ginger to the bowl and mix. When the hot water is ready, stir in the dry ingredients while leaving the remaining cornflour. Continue stirring till you have a stretchy mix that looks like eba. Once the desired texture is achieved, transfer the dough to a bowl. Cover it and allow it to cool completely. When it’s cool, add the remaining cornmeal to the dough and knead until smooth. Now, scoop a little dough with your hand. Roll it on a flat surface or in between your palms till you get a long shape. Place the rod-shaped dough on a plate. Repeat the process of scooping and shaping dough till all the dough is finished. Heat up some vegetable oil then fry the rod-shaped dough in batches till they harden. Scoop the kokoro into paper-lined sieve. Leave it to cool then serve and enjoy.
