Ingredients

1/2 cup of corn flour 2 cups of all-purpose flour 2 eggs 3-4 tablespoons of granulated sugar 1 cup of sweet corn 1 cup of buttermilk 2 teaspoons of baking powder 1 small onion Fresh pepper to taste 1 teaspoon of salt

How to Prepare Buttermilk Corn Snack

Rinse and dice the fresh pepper. Peel, rinse and dice the onions. Set both ingredients aside for later use. Measure out the remaining ingredients separately.

Get a clean, dry, bowl, one that is sizeable enough to accommodate all your ingredients. Use a fine sieve to sieve the all-purpose flour into it; this will get rid of any lump or impurities. Sieve the cornflour into the all-purpose flour as well. Add the baking powder, granulated sugar and salt to the dry ingredients. Mix the dry ingredients together. Set aside for later use. In another clean bowl, break in the eggs. Add the buttermilk to them. Whisk the wet ingredients thoroughly. Combine the wet ingredients and the dry ingredients. Add sweet corn, onions and pepper and mix all the ingredients together until you have a thick, stiff batter. Add vegetable oil to a clean, dry, frying pan. Set on medium heat. When the oil heats up, use a tablespoon or your hand to scoop batter into the oil. Fry till it’s golden brown on both sides. Scoop into a paper-lined sieve.
