  Honey is nature’s gift to man. It is a sweet, syrupy liquid that honey bees make from the nectar of flowers. From time immemorial, it’s eaten as food. We were told that John the Baptist ate locusts and wild honey.

It’s also interesting to note that honey was once considered an extraordinary delicacy because, for a long time, it was the only sweet food. Honey is also used in healing and beauty care. Now, while the above-mentioned facts about honey are well known, below are some facts about honey that you may not know: It Should Not be Given to Children Under One: Honey is a natural sweetener. However, it should not be given to babies younger than one year. That’s because it may contain the bacteria,  clostridium botulinum. This bacteria can produce toxins in a baby’s intestine, leading to infant botulism which is a very serious illness that attacks the body’s nerves. It was Used for Embalmment in Ancient Times: Unprocessed natural Honey was used successfully to embalm and preserve human foetuses and animals for up to three years. One property of honey that makes this possible is the fact that honey is a concentrated solution of sugar. As a result of this, the tissues preserved in it are dehydrated gradually. Honey also has antibacterial properties. This enables it to dehydrate the bodies immersed in it while keeping them free from microorganisms.

It should not be Refrigerated: Yes,  you read right. Honey should not be stored in the fridge because cold causes it to crystallize. So, how then can we store honey? Well, the answer to this question is simple. Store it in an airtight container. Keep it at room temperature in your pantry or out of direct sunlight on the kitchen shelf. Honey never goes Bad When it is Stored Properly: Honey is a superfood but it’s not supernatural. Thus, it will spoil if it’s not stored properly. So, store it in an airtight container. If it’s left unsealed in a humid environment, it will absorb moisture and spoil. Honey Gets its Colour and Taste from the Flower’s Nectar: Honey’s look and taste depend on two critical factors. The first is the type of flower that provides the nectar. The second factor is the weather condition in the region. Honey comes in different colours that range from almost colourless to dark brown. The flavours can be mild or bold depending on where the honey bees buzzed. The general rule, however, is that light coloured honey has a milder taste while dark coloured honey has a stronger taste. I’ll conclude with this fact. Unprocessed honey is the healthiest choice. But it’s is longer easy to find it as most of those sold at the market and grocery stores have been treated.
