I know that this year get as e be. But the challenges of the year will not stop us from celebrating and thanking God for the gift of life, good health and family. When we celebrate, as we usually do at Christmas, we bake cakes not just for our family’s enjoyment but for the entertainment of guests.

On our menu, today is apple cake. I know this is not our usual cake but we no go die on top chocolate cake and vanilla or strawberry flavoured cakes now. Variety, as you know is the spice of life; so, let your cake have a different flavour this Christmas. I have my cousin, Onyinye, to thank for today’s recipe. She’s my family’s cake boss. Ingredients for Apple Cake

250g of all-purpose flour 200g of sugar 4 apples 3 eggs 100g of melted butter 2 tablespoonful of baking powder

How to Prepare

Wash, rinse and dry your baking pan. Lightly grease the inside of the pan with butter or vegetable oil. Afterwards, dust the greasy pan with a little flour and set it aside for later use. Sieve the flour. Add the baking powder to it then combine the two. Break the eggs into a clean soup bowl. Rinse, peel and slice the apples into tiny cubes. If you want to use some of the apples for decoration, then they should be cut differently (the half-circle cut won’t be a bad idea) and put in a separate bowl to avoid mixup. Next, pre-heat the oven to 170C. Pour the apples into a clean blender and blend with a little water. When you’ve pureed the apple, transfer it into a clean clean wide bowl. Add the eggs to the bowl. Also, add the sugar and the margarine to it. Whisk the ingredients thoroughly. Sift in the flour and baking powder mix. Combine all ingredients until you have a smooth batter. Pour the cake batter into the greased and flour-dusted baking pan. If you saved some apple slices for decoration, the time to use them is now. Place them at the top of the cake batter. Put the batter in the pre-heated oven and bake for 40 minutes. When the time has elapsed, bring out the cake and dip a toothpick into it. If it comes out dry, your apple cake is ready.
