If you are not of Hausa extraction, I’ll recommend it as a special holiday treat for children.  It’s refreshingly different from the usual collection of goodies. If you make this delicacy, you’ll definitely score major points in the heart of the little ones around you. Please note that coconut chaff is best used in preparing this snack. You get coconut chaff from blending coconut when making coconut milk or coconut oil. In fact, I consider Shuku Shuku the perfect way to recycle coconut chaff. This is because Shuku Shuku made with coconut flakes are usually too light and dry. But if it’s not available, you can increase the number of coconut flakes then add egg to the mixture. You can include vanilla bean or a dash of nutmeg in this recipe. Shuku Shuku can be served as dessert. It can also be enjoyed with Nigerian drinks like Zobo, Kunun, Soya Milk or Chapman

Unsweetened Coconut Flakes Egg Yolks Icing Sugar All-Purpose Flour

Method Of Preparation

Preheat the oven to 375F. Align cookie sheet with parchment or foil paper, coat with cooking spray. In a large mixing bowl combine the coconut flakes, the egg yolks and the sugar. Roll the mixture into bite-sized balls. Roll each coconut ball in a small bowl containing all-purpose flour before placing it on a baking sheet. Bake for fifteen to twenty minutes or until the coconut balls are slightly brown. Take them out of the oven. Allow to cool and store in an airtight container.
