I don’t know about you but I’m someone who loves to celebrate. I make a big deal out of Christmas, New Year, Val, birthdays and anniversary celebrations. That’s because, on these days, I have a legit reason to buy and eat cake and chocolates, drink wine and of course, give and receive gifts. February is here and I’m happy because even though I don’t have anniversary or birthday celebration this month, I and everyone who wants to, gets to celebrate love and to enjoy the goody-goodies that come with this celebration.

Since we are in the month of love, I think it’s fitting that our recipes be sinfully tasty and rich. Most importantly, it should be made with a dash of sweetness and love. So, with this goal in mind, we begin this month with the recipe for yoghurt parfait. This versatile meal is delicious and easy to prepare. It is also loved by children and adults alike. The best thing about parfaits is that they can be customized to suit your taste and available ingredients. So, while this is one of the many ways I make my yoghurt parfait, feel free to freestyle as you please.

Ingredients for Yoghurt Parfait

Sweetened yoghurt Bananas Grapes Pineapple Apples Chocolates Groundnuts

How to Prepare

Wash your hands thoroughly. Rinse the fruits and cut the bananas, pineapple and apples into tiny bits so that they can fit into the glass. When you have finished cutting the fruits, mix them all together. Cut the chocolate into chunks. The yoghurt is usually the base of the parfait so open it and pour some of it into the glass. Let me mention at this point that the size of the glass must be taken into consideration when adding the layers of ingredients. I prefer to use a tall glass for mine but if you are using a small glass, it might be best to reduce the ingredients you add per layer so that you’ll have space to accommodate as much ingredient as possible. Having said that, top the yoghurt with one-quarter cup of groundnut. Scoop some fruits on top of the groundnut. Add some chocolate chunks on top of it. Then add another layer of yoghurt. Top it up with the mixed fruits. Add more yoghurt. Finish off with chocolate chunks and garnish the top with grapes (if available). Serve and enjoy.
