Crunchy and tasty, yamarita is fried yam with a twist. You can find it in most restaurants in Nigeria. But you can also prepare it at home. Ingredients
1/2 tuber of medium sized yam
1 cup of all purpose flour
2 eggs
Fresh pepper to taste
1 teaspoon each of ground ginger and garlic
1 teaspoon of ground pepper
Seasoning cube
1 teaspoon of curry
Salt to taste
Vegetable oil
How to Prepare
Slice, peel and cut the yam. The classic shape for fried yam is rectangle. Since Yamarita is a variation of fried yam, the yam should have the signature shape but the size should be bigger than the usual size for fried yam.
When you’re done cutting the yam, give the pieces of yam a good rinse and place them in a clean pot. Add water to the pot; the quantity should be enough to cover the yams. Add a pinch of salt and set the pot to boil on medium heat until the yam is tender but firm.
Bear in mind that for yamarita, the business of cooking does not end with boiling the yams. The yams will still have to be fried. If you overcook the yams, you won’t be able to fry them. This is why you should aim for tender but firm. Anyways, when your yam is ready, drain the water and leave the yams to cool.

Break the eggs into a flat plate. Add a bit of seasoning cube, fresh pepper and salt to it. Mix and set aside for later use.
In another flat plate, add the flour. Add the ground ginger, garlic and ground pepper as well as seasoning cubes and curry. Combine the ingredients and set aside for later use.
Dip each piece of yam into the egg mixture. Pass it through the flour mix taking care to envelope each piece of yam completely in the flour mix. Pass the flour coated pieces through the egg mix again. Also, make sure the yam pieces are covered in the egg mix. Place each coated piece in another flat plate and repeat the process till all the pieces are coated.
Pour vegetable oil into a clean frying pan. Place it on low to medium heat. When the oil heats up, gently put the coated yam pieces into the oil. Fry on both sides till slightly brown. Your yamarita is ready. You can eat it alone or with egg or pepper sauce.
