  I have a new salad obsession. It’s called Sweet Potatoes Salad. I discovered this food jewel while searching for new recipes to try out. I have @gracevalue to thank for it.

Sweet Potatoes Salad is a five ingredients salad. So, you won’t need to break the bank to make it. As can be deduced from the name, sweet potatoes are a must-have ingredient for this salad. It brings its natural sweetness to this meal. Thus, it’s not just delicious, it’s healthy and satisfying too. It’s also easy to prepare. Ingredients: Cabbage 2 Eggs 4 Sticks of Carrot Cucumber 3 Medium Sized Sweet Potatoes For the Dressing, you would need: Lemon juice Mayonnaise Pepper

How to Prepare: Peel the sweet potatoes one by one. Pour some water into a bowl and drop each peeled potato into it. This will keep the potatoes from changing colour. When you peel the last one, rinse the potatoes and put them in a clean pot. Pour some water into the pot; it should at least cover the potatoes. Add some salt. Cover the pot and set it on medium heat. While the sweet potatoes are cooking, prepare the rest of the ingredients.  Peel and grate the carrots. Slice the cucumber open and scoop out the watery centre. Dice it into cubes and put them in a bowl. Hard boil the eggs; then, peel and slice them. Slice the cabbage thinly. Plate it as well. Then set all prepared ingredients aside for later use. Tidy up your work surface because cooking is best done in a clean environment. Check the sweet potatoes. If it’s soft enough for your fork to slide in and out with ease, it’s ready. Drain the water quickly. Sweet Potato salad is made with cold sweet potatoes. So, allow the potatoes to cool.  While the potatoes are cooling, make the salad dressing. To do this, squeeze some lemon juice into a cup, remove the seeds and transfer the juice into a blender. Add the mayonnaise and a teaspoon of black pepper. Cover the blender and blend till it’s smooth. Now, chop the sweet potatoes and put them in a bowl that’s sizeable enough to accommodate the rest of the ingredients. Then, begin the process of assembling the ingredients. Pour the cabbage over the potatoes. Add the grated carrots and the diced cucumber. If you’ll eat immediately after assembling the food, then, add the salad dressing and mix all the ingredients together. But if you’d prefer your salad to be a bit cold, then, cover the bowl and place it in a refrigerator. When you’re ready to eat, add the salad dressing, mix and garnish with eggs.
