Noodles are what we have on our menu today. But today’s recipe is not business as usual. There’s an interesting twist to this one hence the name, Noodle Fritters, and I can assure you that you’ll love it. Noodle fritters, like all noodle meals, is a quick and easy meal to prepare. Once you’ve parboiled your noodles and fried your plantain, your food is almost ready.

Today’s fritters was prepared with Indomie Noodles because it’s my all-time favourite. Please feel free to use the noodles brand of your choice. That said, let’s go and prepare this food.

Ingredients for Noodle Fritters

Indomie Noodles Noodles seasoning Onions Scotch bonnet pepper Green pepper Vegetable oil Eggs Stock cube Thyme Ripe plantain

How to Prepare

Pour some water into a clean pot and set it to boil on medium heat. When it comes to the boil, drop the noodles into the pot to cook. While the noodles are cooking, peel, rinse and dice the onions. Rinse and dice the green bell pepper and the scotch bonnet pepper separately. Set all diced ingredients aside for later use. Check the noodles. If it has softened, then transfer it into a sieve to drain the water.

Peel and dice the plantain. Sprinkle salt on the plantain and toss to ensure even distribution. Pour vegetable oil into a clean frying pan and preheat. When the oil is hot, carefully add the plantain into the oil and fry till golden brown. Scoop the plantain into a sieve and set it aside for later use. Break the eggs into a clean bowl. Add diced onions, fresh pepper, thyme, a pinch of stock cube seasoning and salt to the eggs. Whisk them together. Put a clean pot on low heat. Grease it with oil and pour the noodles into it; spread it evenly. Pour the egg over the noodles. Add the fried plantain to the pot as well. Also add the onions, the scotch bonnet pepper and the green pepper. Cover the pan and cook on low heat for 10 to 20 minutes.
