Groundnut Milk is a non-dairy beverage. It is affordable and refreshing. This drink is a great way to get the nutritional benefits of groundnut without chewing it. Groundnut Milk is suitable for people of all age groups. What’s more, the lactose intolerant, the vegetarian and those on a diet will find this drink a healthy alternative to cow milk.

Before we start discussing ingredients and method of preparation, here are four things for you to bear in mind. The first is that it is advisable to boil Groundnut Milk before drinking. This is because raw groundnut may contain aflatoxin, which is a toxin produced if food item is contaminated by a certain kind of mould. Thus, boiling Groundnut Milk before drinking eliminates any threat posed by this poisonous carcinogen. This however does not mean that this drink cannot be taken raw, it certainly can. The aflatoxin in food is said to be negligible. The above information merely advises you of the potential threat.
The second thing I’ll like you to take note of is the fact that Groundnut Milk is best consumed fresh. Prepare what you can finish in one day. But if this drink is boiled, it can last for two days.
The third thing for you to note is that we’ll be using unpeeled groundnut for this recipe. This is because if you learn how to make this beverage with unpeeled groundnut, you won’t have any difficulty making it with peeled groundnut. Lastly, I use ginger for this recipe because of its peppery flavour. Feel free to omit it if you’d rather not use it.

Method of Preparation
Put the unpeeled groundnuts in a clean bowl. Pour warm to hot water on it and wait for a few minutes. If you notice that the peels have become baggy, pour out the hot water and replace with cool water. Rub the groundnuts between your palms and their peels will come off. When you’re done removing the peels, decant them as you would beans peel. Pour cool water into the bowl of peeled groundnuts and allow to soak for three hours. Peel the ginger, rinse and cut it into tiny bits.
After three hours, pour the groundnuts and the ginger into a wet mill blender. Add a little water. Please, the water should be just enough to turn the blades of the blender. Blend till smooth.
Use a cheese cloth to separate the milk from the chaff. Rinse out the chaff with a little water to ensure there’s no milk left in it. Pour the milk in a clean pot and cook on medium heat till it boils. Stir often so that lumps do not form. Once it boils, allow it to cool completely. Transfer the Groundnut Milk to a jug or a bottle. Serve chilled or at room temperature.
