Method Of Preparation
Let me begin by saying that this recipe is easy and straightforward. But the chicken should be prepared for marination at least two hours before time. That’s because the major part of the chicken’s sweetness is in its marinade and you don’t want to lose that. Having said that, rinse the chicken. Put them in a sizeable bowl. Add seasoning cubes, salt, some ground Cameroon pepper, suya pepper, ginger and garlic powder. Break the egg into a soup bowl. Whisk it and pour it over the chicken. Add the milk as well. Mix well, cover the bowl and put it in the refrigerator. Allow the chicken to marinate for at least two hours. While it’s marinating, pour the flour into a dry bowl. Add the cornflour, the remaining Cameroon pepper and a sprinkling of salt. Mix the dry ingredient together; cover them with a cling film then wait for the chicken to be well marinated. When the allotted time for marination is up, bring out the chicken, the flour mix and another clean, dry bowl. Oya, go and wash your hand. I don’t know what you spent the last two hours doing but we don’t want germs on the food. Now, uncover the flour mix. Add vegetable oil to a clean saucepan and place it on medium heat. Take a chicken, dip it in the flour mix then place it in the empty dry bowl. Repeat the process of picking and coating till all the chicken are well coated. When the oil is hot enough, drop the chicken into it one after the other. Fry on both sides till golden brown then serve and enjoy. Crispy chicken drumsticks should be enjoyed with any chilled drink of your choice. Olingo amaka bikonu. Happy Weekend in advance.
