  If you love Nigerian buns, then you will definitely love what we have on the menu. Coconut buns are simply Nigerian buns with a twist. It’s crunchy, delicious, flavourful and addictive. It’s the perfect holiday snack, one that is guaranteed to surprise and impress your loved ones.

This snack is also an ice breaker. If some relatives you haven’t seen in a while come visiting this Christmas and you don’t know what to discuss with them, just serve them these buns and conversations will magically start from there. If you doubt me, nwanne, try and see.

Ingredients

2 Cups of All-Purpose Flour 1/4 Cup of Sugar 1/2 Cup of Coconut Milk 3 Tablespoons of Desiccated Coconut 2 Eggs 3 Tablespoons of Butter 2 Tablespoon of Powdered Milk 1/2 Teaspoon of Nutmeg 1/2 Teaspoon of Baking Powder A Pinch of Salt Coconut Oil for Deep Frying

Method Of Preparation

Break the coconut open. Extract the coconut meat from the shell. Trim the brown skin off the coconut meat then chop into blendable bits. Pour the chopped coconut into a clean blender. Add the coconut water and some drinking water into the blender jug; the quantity should be just enough to blend the coconut smoothly. After blending, use a cheesecloth to separate the creamy coconut milk from the chaff. Set it aside for later use. Sift flour into a sizeable bowl. Add the sugar, baking powder, milk, desiccated coconut, nutmeg and salt to the bowl. Mix these dry ingredients together. Break the eggs into a clean soup bowl. Make a hole in the bowl of dry ingredients. Pour the eggs into the hole. Add the butter and some of the coconut milk into the hole as well. Now, mix the ingredients together gradually. Let me mention here that the batter should be thick and stretchy. Therefore, watch your battery as you mix. You must endeavour to get the consistency right. It will help your coconut buns to assume the classic round shape. If your batter is too thick, add more coconut milk. If it seems watery, add a bit of flour to the mixture to thicken it up a bit. Once the thick, stretchy consistency is achieved stop mixing as you don’t want to over mix the batter. Place a small pot on medium heat. Add about four cups of coconut oil to it. When the oil is hot, scoop some round-shaped batter into it. Fry on both sides till golden brown. Scoop the coconut buns into a paper-lined sieve. Put the next batch of coconut buns into the pot. Turn the heat down a bit as the oil is hot and you want the buns to cook through. Now, repeat the process of scooping and frying till your batter is finished. Serve and enjoy.
