  If you’ve never heard of this salad, well,  you now have another reason to follow the connect Nigeria food column. Chicken suya salad is a simple, delicious meal that is prepared by marrying chicken suya and some vegetables together. I call it the bold salad because all the ingredients are cut big so there is no time for plenty serenren. Chicken Suya, the primary ingredient for this salad, is a flavourful, sinfully delicious grilled chicken that is sold all weeknight long on the streets of Nigeria. But the flavours in this popular street food can be duplicated at home if you have suya pepper. This basically means that you can make chicken suya salad if you don’t have already prepared chicken suya. The food will just take a longer time to prepare. Before I share this recipe with you, let me mention here that the first step is just for those who do not have already grilled chicken. If you do, just skip it.

Ingredients

7 Long Pieces of Chicken Suya Half of a Small Cabbage A Medium Sized Cucumber A Sprinkling of Sweet Corn Medium Sized Onion 2 Teaspoons of Suya Pepper Fresh Tomato Plum

How To Prepare

Season chicken with suya pepper, ground chilli pepper, salt and peanut oil. Allow it to marinate for at least two hours. When the chicken has finished marinating, place the chicken on the grill. Cook till it’s tender. Rinse the vegetables thoroughly. Peel, rinse and cut the onion into rings and the tomato plum in circles.  Cut the cucumber and cabbage into long thin strips. Refrigerate the sliced vegetables. Check the chicken. If it’s ready,  take it out of the grill and allow it to rest for at least ten minutes. When the allotted time is up, bring out the refrigerated vegetables. Cut up the chicken and toss it in yaji pepper. Now, bring out the plate then arrange the chicken and the vegetables artfully. When you’re done, sprinkle the sweet corn on the plate then the suya pepper; the suya pepper will serve as the dressing.
