This sauce will warm your family’s heart. Just pair it with boiled rice or boiled Spaghetti and you’ll have the winning dish, one that is a perfect lunchtime meal for your kids on school days. Chicken Stir Fry is usually prepared with boneless chicken. You can use chicken breast or thighs for this recipe.

How To Prepare
Rinse and dice the vegetables and the scotch bonnet pepper. Peel, rinse and dice the onions. Mince the ginger and garlic. Set these ingredients aside for later use. Rinse the chicken. Put it in a sizeable bowl and season it with curry, thyme, ginger, garlic, stock cubes and salt. Cover the bowl and put it in the freezer to marinate for twenty minutes. Afterwards, pour vegetable oil into a clean saucepan and set it on medium heat. When it heats up, transfer the marinated chicken from the bowl to the saucepan whilst reserving the marinade. Stir fry the chicken on medium heat till it loses its pink colour. Scoop the chicken out of the oil and into a paper-lined sieve. Set aside for later use. Pour in the chopped onions and sautè for at least two minutes. Add the green pepper. After a minute, add the carrot. Then add the scotch bonnet pepper and the remaining ginger and garlic. Stir fry these vegetables for a minute. Add the stock cubes and salt. While these are sauteing, add soy sauce and cornflour to the chicken marinade. Mix till they are well combined then set aside for later use. Now, add the chicken back into the pan of stir-fried vegetables. Also, pour the marinade-soy sauce mix into the pan. Mix thoroughly and allow to simmer for a few minutes. Check the taste and consistency of your sauce. If it’s too thick, add more marinade or water. If it’s too watery, thicken it up with cornflour. Once you are satisfied with the taste and consistency of the sauce, turn off the heat. Stir fry chicken sauce can be enjoyed with boiled rice, boiled spaghetti and even boiled yam.
