On our menu, today is something Christmassy. It’s brownies!! It’s always a pleasure to have this chocolatey goodness. Brownies are easy to whip up and oh my gosh! the batter is so good that you may just be tempted to lick it all up. And when it goes into the oven, the aroma will fill your home; it will make your mouth water and it will make your neighbours jealous.

Once again, I have my cousin, Onyinye, @eclairpastriz to thank for today’s recipe. If you’re not yet following her on Instagram, you dey dull yourself oh! She assures me that today’s recipe will be enough for eight to twelve people. Before I share this recipe with you, it’s worthy of mention that crushed nuts like groundnuts, cashew nuts, walnuts as well as dried fruits, dates and coconut chips are optional additions to brownies.

Ingredients for Brownies

3¾ cups of sugar 6 eggs 1½  cup of all-purpose flour 1½ cup of unsalted butter 2 tablespoons of vegetable oil ½ teaspoon of salt 1½ tablespoon of chocolate flavour 1½ cup of cocoa Chocolates

How to Prepare

Preheat the oven to about 350F. Lightly grease a clean baking pan with vegetable oil then line it with parchment paper.

In a large bowl, add the melted butter, oil and sugar. Mix them well. Whisk the eggs and chocolate flavour and beat till they are light in colour. Sift the flour, cocoa powder and salt into the butter and sugar mix. Next, gently fold the dry ingredients into the wet ingredients until they are combined. Please note that the operative word here is gentle. You don’t overbeat the batter for brownies once flour and cocoa powder are added. If you do, it will create air pockets in your brownies that will make it have a cakey texture. Fold in three-quarters of the roughly chopped chocolates. Pour the batter into the already greased pan. Use a cooking spoon to smooth out the top. Add the remaining chocolate chips. Bake for 30 to 50 minutes. Bring it out and check. If the centre is just set to the touch but the inside is still wet, your brownies are ready. Now let me impart an interesting piece of information that @eclair_pastriz shared with me. In her words, “brownies no dey done; it should not set like cake.” So, try not to overbake them. When you dip a toothpick inside it, it should not come out clean and dry; it should still be wet. Take the baking pan out of the oven. Leave for at least 20 minutes; brownies continue baking even though the pan is out of the oven. After 20 minutes, remove them from the baking pan and allow to cool. Once cool, serve and enjoy.   Featured Image Source: Inspired Taste
