Coconut butter is made from grinding the meat of a coconut into a white butter-like consistency. It contains beneficial fibre and healthy fat so it fills you up for longer. You can buy the butter from the mall but it’s cheaper and better to make it yourself to ensure you’re getting 100% coconut butter. This buttery goodness can be enjoyed in various ways:
  • It can be eaten straight up with a spoon, yes, it’s that good.
  • You can spread it over your bread in place of real butter
  • It can serve as salad cream if you don’t like mayonnaise
  • You can add it to your smoothie
  • You can also use it in baking
  • You can drizzle the butter over your fresh fruits
  • It’s an excellent spread for your pancakes, all the good fats helps balance your blood sugar 😉
  • You can use the butter as a dairy-free creamer for your coffee and tea
  • You can also add it to your oatmeal, it adds a creamy coconutty taste to your oatmeal.
  • I wouldn’t recommend for cooking as it burns quickly, but you can use it for your vegetable, mushroom or meat stir-fry.
The butter is also excellent for hair, it shares the same qualities with its oil. The butter makes for a great hair mask.

Ingredients

  • Shredded unsweetened coconut
  • Salt (optional)

Directions

Put the shredded coconut into a blender or food processor. Blend on high speed, the coconut shreds begin to break into clumps after 3 minutes and gradually it consistently changes from clumps to a buttery paste texture. Add salt if you desire, scoop the butter into a container and keep in the fridge. You can add additional flavours to the butter to spice it up 🙂
