One more thing to note, carrot is a vegetable. So, fufu made with just it cannot be moulded into balls. That’s why it needs psyllium husk or xanthan gum. These are low carb binders that will help your vegetable swallow to become mouldable. They can be bought in big supermarkets around you or online on Jumia or Konga.

How to Prepare
Trim the shoots of the carrot. If the carrots are muddy, scrape them before use. Please ensure that any dark mark on the body of the carrot is either scraped or cut off. Once the carrots are clean and without blemish, rinse and grate them. Afterwards, blend the carrots with as little water as possible. When you are done blending, spread a muslin cloth over a clean bowl and pour the carrot pulp into it to drain out the juice. Wring the muslin cloth to ensure there’s no juice left in the carrot pulp then transfer the pulp into a clean pot. Please do not discard the juice as you may need it later. Set the pot on medium heat and start stirring with a wooden spatula. When it heats up, check the time then keep stirring for another 5 minutes. If you notice the pulp is drying up, add some carrot juice to it and continue stirring. Once it’s 5 minutes, add the psyllium husk and continue stirring till a moldable dough is formed. Add a little more carrot juice to the dough. Cover and cook for about 30 seconds. When the time has elapsed, stir well. Turn off the heat and scoop your carrot swallow into a clean plate.
