This recipe is both delicious and healthy. So don’t feel guilty munching this combo because you will be doing your body a lot of good. Enjoy!   Ingredients: For baked plantain
  • 1 large unripe (green) plantain (cut into strips)
  • 1 tablespoon coconut oil
  • Salt to taste
  • 1/2 teaspoon garlic powder
  For garlic avocado dipping sauce
  • 1 avocado (halved and pitted)
  • 1 large clove garlic (chopped)
  • Lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Preheat your oven to 425ºF. Line a large baking sheet with parchment paper.
  • In a mixing bowl, toss the plantain strips in the coconut oil with sea salt and garlic powder. Place the plantain strips on the sheet and bake for 20-25 minutes, turning them at intervals. Bake until golden or brown slightly.
  • Allow to cool a few minutes before serving
  • Put avocado in a blender, add the garlic, lime juice and salt. Blend until you get a smooth and creamy texture, then add some water and blend until really smooth and creamy.
  • Drizzle in the olive oil then blend until well mixed and creamy.
