Kunu/kunu is a popular drink in the northern part of the Nigeria. Also called kunu zaki, it’s a non-alcoholic drink made chiefly from millet grains. Sometimes, sorghum and maize are also used in the preparation of the kunu drink. The drink is whitish in color if it’s prepared with millet or maize and brown when prepared with sorghum. The millet grain is uniquely high in nutrients, which includes an impressive starch level, very high B-vitamin content, calcium, iron, potassium, zinc, zinc, magnesium, not to mention being a healthy source of essential fats in the body. Ingredients
  • 3 cups millet
  • 1 tablespoon ginger ( fresh or dried)
  • 1 tablespoon black pepper/cloves
  • Sugar to taste
  • Vanilla essence ( optional)
  • 2 liters of water
Directions
  • Wash millets to remove the stones ( in case there are any)
  • Soak the millet seeds in cold water for about 48 hours ( the water should be changed every seven hours)
  • Add the ginger and cloves or black pepper in the soaked millet and blend into a very smooth paste using a blender with sharp bladed or a commercial grinding mill.
  • Sieve the grounded or blended millet and allow it to settle for about seven hours, after which a clear fluid rests above and the thick sediments at the bottom.
  • Carefully, sieve the liquid leaving only the thick paste.
  • Divide the paste into two separate parts, set one part aside.
  • Boil some water. Add the hot boiled water into one part and stir until it’s thick just like pap and leave it uncovered to cool
  • Then pour the other part you kept aside and stir till you achieve desired thickness, you may add water also
  • Sieve the mixture again to remove the chaff.
  • Sweeten to taste with sugar and vanilla flavor if desired
  • Refrigerate and served chilled.
