Who remembers Shuku Shuku, the chewy snack we devoured as kids back in the day? The delicacy is a popular local dessert that’s easy to make and lovely to eat. We’re not quite sure which tribe is responsible for this treat but we do know that it’s made with coconuts – coconut flakes to be exact – combined with common baking ingredients.

Here’s a simple recipe for making the dessert:

INGREDIENTS (14-15 balls)

1. 1 cup of unsweetened flaked coconut

2. 1⁄4 cup of caster sugar or 1⁄4 cup superfine sugar

3. 3 egg yolks

4. 1⁄2 cup of self-raising flour

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C). 2. Mix the coconut, sugar and egg yolks till a stiff dough is formed. Squeeze into 1 inch balls, and roll each ball in flour to coat. 3. Place on a baking sheet with about 2 inches of spacing. 4.
