Pineapple bread is one of a million ways to enjoy the super fruit that is pineapple.
Pineapple is packed with good fibre to help digestion, vitamin C to boost that immune system, and one cup of diced pineapple contains 77 calories.
Fun fact: The pineapple got its name in English because of its resemblance to a pinecone, but in many European countries, it’s called a derivative of
annas, which comes from the Paraguayan word
nana, meaning “exquisite fruit.”
The Pineapple bread is moist and very delicious, and can serve as a breakfast meal, when matched together with coffee, or it can just serve as a treat. Either way, it is something you and your family will definitely love.
Preparation time:20 minutes
Cook time: 60 minutes
Yield: 2 loaves
Ingredients
- ½ cup of butter
- 1 cup of sugar
- 2 cup of all-purpose flour
- 3 eggs
- ½ teaspoon of baking powder
- ½ teaspoon of salt
- 1 cup of crushed pineapple
- Greek yoghurt (Optional)
Directions
- Preheat the oven to 350 ℉
- Grease and flour two loaf pans
- In a small bowl combine flour, baking soda and salt; set aside
- Cream butter and sugar in a large mixing bowl until light and fluffy
- Beat eggs, one at a time, whisking and incorporating them well before adding the next
- Alternatively add the flour and the Greek yoghurt if you decide to use it, beginning and ending with the flour.
- Fold the pineapple into the batter
- Pour into already prepared pans.
- Bake for 30 minutes, cover bread with foil, and bake for another 30 minutes
- Cool bread in pan for 2 minutes before removing from the pan.
- Enjoy
