NB: Groundnuts with small seeds have more oil than those with bigger seeds and form smoother paste. They also make sweeter paste.- Fry your groundnut till it is done. Don’t add salt to the groundnut.
- Peel the thin outer cover and pick out the bad seeds.
- Fry your dry pepper in an empty pot for few minutes till it darkens a bit. This helps to bring out the flavour.
- Fry your Ehiri (African nutmeg).
- If you’re using crayfish, fry it too.
- Add all the ingredients together and mix with a pinch of salt.
- Blend all ingredients together to form a smooth paste. If you don’t have a blender, you can take it to the market, the commercial grinders will give you a smoother paste.
- Your sauce is ready.
