Plantains are the less sweet, starchier equivalent of banana. They are rich in fibre, vitamins and minerals. Plantains are a staple food in most homes in Nigeria. Interestingly, a variety of meals can be made from this food regardless of its stage of ripeness. Today, we’ll briefly discuss some plantain recipes.
Plantain Chips
Plantain chips, which is also known as kpekere, is a well loved street snack. It is made from thinly sliced unripe plantain. After slicing, the plantains are deep fried until they are golden brown and crunchy. Once upon a time, salt was the only seasoning used in preparing this snack. Today, with creative minded business people everywhere, different seasonings are now used in its preparation. The result is the birth of different varieties of kpekere.

Bóle
This is a roasted plantain dish. Bóle is well loved by the people of the South-South region; there, it is a popular street food. Bóle can be prepared with both ripe and unripe plantain. It is usually served with spicy palm oil sauce and fish or groundnut.
Boiled Plantain
This is one of the easiest and healthiest ways to prepare plantain. Plantain can be boiled ripe or unripe but never overripe. Boiled plantain can be enjoyed with egg sauce, pepper soup, stew, or palm oil sauce. It can also be boiled with beans as part of a one pot dish.
Dodo
This is another name for fried plantain. Dodo is the most popular way of enjoying plantain. Fried Plantain is usually made with ripe plantain. It can be eaten as a full meal or a side dish. It is considered a full meal if pap, custard or oat is served as an accompaniment. But if dodo is served with rice, beans, noodles, it is said to be a side dish.
Plantain Pancake
This comfort food is made with ripe, overripe or unripe plantain. It’s an irresistible meal that can be served as breakfast or as snack. It is light, delicious, and easy to prepare.

Gizdodo
This is a one pot combo of gizzard and ripe plantain mixed in pepper sauce. It is usually served as an accompaniment to rice. Gizdodo is a simple, flavourful dish. It is usually served in parties but it is great for Sunday dinners too.
Ukpo Ogede
This is the local name of plantain moi moi. This delicacy is prepared with overripe plantain and corn meal. Ukpo ogede is easy to prepare. It is the solution to that overripe plantain that’s waiting to be trashed in your kitchen.
Plantain Mosa
This is another recipe that is made with overripe plantain. This delicious meal is also called plantain puff puff. Indeed, plantain mosa looks like puff puff; except for the addition of plantain in plantain mosa, the ingredients for the two are the same.
