Today, I’m talking about ganache.
Ganache is a glaze, icing, sauce, or filling for pastries made with chocolate and cream.
Ganache is what is used when creating drips on a cake. It can be made using any kind of chocolate; white, milk, or dark.
Here are the different recipes I use to create the perfect drip on a cake.
White Chocolate Ganache (Ratio 4:1)
500g White Chocolate
125g Evaporared Milk or Heavy Whipping Cream
Dark Chocolate Ganache (Ratio 3:1)
600g Dark Chocolate
200g Evaporared Milk or Heavy Whipping Cream
