Today’s granola is nutty and fruity. I used almonds and groundnuts for this recipe but you can use any nuts and even seeds of your choice. This granola was naturally sweetened with honey but you can use brown sugar or even maple syrup to sweeten yours. Lastly, I use raw nuts for my granola. Most recipes will just list the ingredients for you and you leave you to figure out this part by yourself. You will now go and use pre-roasted nuts and ruin the granola with the burnt taste of the nuts. So, appreciate me for saving you the stress. Lol. Ingredients 3 cups of rolled oats 2 Cups of Shredded Coconut 1 Cup of Almonds 1 Cup of Groundnuts 1/3 Cup of Honey 1/2 Cup of Chopped Dried Fruits 3 Tablespoons of Melted Butter.

2 Teaspoons of Vanilla Extract 2 Teaspoons of Cinnamon (Optional) 2Teaspoons of Ginger (Optional) 1/2′ Teaspoon of Nutmeg (Optional) 1 teaspoon of Salt Method of Preparation As I mentioned earlier, this recipe calls for raw groundnuts. Thus, pour the groundnuts into a tray and pick out the bad ones. Soak them in boiling water till the water changes its colour. Strain out the water. Add salt to the groundnuts then spread them in a tray and sun dry them. Set aside for later use.

Preheat the oven to 350°F. Cover the baking sheet with parchment paper. Set aside for later use. Pour the oats, almonds, groundnuts and salt into a clean, sizeable bowl. Set aside for later use. Add the spices (cinnamon, ginger, nutmeg) to the dry ingredients. In a separate bowl, whisk the melted butter, honey and vanilla extract. Afterwards, drizzle the wet ingredients over the dry ingredients. Toss the ingredients to combine. Transfer the mixed ingredients to the baking sheet and put it in the oven. Bake for fifteen minutes and take it out. Give the mixture a thorough stir. Afterwards, sprinkle the coconut evenly on top of the granola. Pop the granola mix back into the oven and bake for another five to eight minutes. You want the coconuts lightly toasted not burnt so monitor it closely. When the allotted time is up, take the granola out of the oven. Please note that the granola won’t be crunchy in texture right out of the oven. So, allow it to cool for at least fifteen minutes. Stir in the dried fruits then use your hand to break the hardened granola into any shape of your choice. Your granola is ready.
