  Hi, everyone. Hope you’ve had a good week thus far. The weekend is here. If your week has been as busy as mine, then, you must be looking forward to it. My weekend resolution is to rest and eat well. With this worthy resolution in mind,  I prepared chin chin and candied groundnuts yesterday (you can’t enjoy the weekend without snacks now, can you?). Both snacks are incredibly delicious and festive. But candied groundnut which is also known as sugar-coated groundnuts or sugared nuts is easier to prepare than chin chin.

I’ll be sharing the recipe for candied groundnuts in a bit but before I do, here are a few notes on the ingredients. Candied groundnut is made with roasted groundnut. You can either buy already roasted groundnut or roast some at home. If you need to learn how to roast groundnut at home, click on the link That said, when preparing this snack, the skin of the groundnut is not peeled off because it helps the sugar to glue firmly to the nuts. Lastly, either brown sugar or white sugar can be used in making sugar-coated groundnuts.

How To Prepare

Pour the groundnuts, sugar and water into a clean saucepan. Mix the ingredients with a wooden spoon. Please, ensure that the groundnuts are well coated with the sugar mix; you don’t want some to be candied while others are not. When you’re done mixing the ingredients, place the saucepan on medium heat and start stirring continuously. Let me also stress the fact that you need to pay close attention to the ingredients in the saucepan as burning will seriously alter the taste of the candied peanuts. When you notice that the sugar mix is drying up, reduce the heat and continue stirring. Keep watching the sugar mix and when it begins to feel grainy, turn off the heat. Give the content of the saucepan a quick but thorough mix then pour it into a tray and spread it out to cool. The nuts will harden a little as it cools. Your job is done.
