Recipe For Pineapple Fried Rice

 

Yesterday, I bought the sweetest pineapple ever. It was so delicious that I was tempted to bring out the portion I had saved to make this food. Thank God I resisted the temptation oh! Lol. This pineapple fried rice is the Nigerian modification of the Asian recipe. Thus, it is spicy and sweet. It’s also flavourful, incredibly delicious and so easy to make that you can rustle it up on a school day for your children’s lunch.

When making this food, I usually boil the rice and marinate the protein. I prefer shredded chicken; so, I seasoned it with curry, thyme, paprika, pepper, salt, two tablespoons of cornflour the night before. I also prepare the veggies at night too. So, what I do in the morning is to scramble the eggs, stir fry the rice, my protein of choice and veggies in my non-stick pan and voilà! The delicious pineapple fried rice is ready.

4 Cups of Cooked Rice

2  Raw Eggs

A Cooking Spoon of Vegetable Oil

Carrots

Green beans

Green Pepper

Onions

Scotch Bonnet Pepper

Ginger

Garlic Cloves

1 & 1/2 Cup of Cubed Pineapple

Seasoning

Salt

Method Of Preparation

Break the eggs into a soup bowl and beat it.  Preheat some vegetable oil in a clean non-stick pan. Pour in the eggs and scramble. When it’s ready, scoop it out and set it aside for later use.

Pour the remaining vegetable oil into the pan. When it heats up, add the diced onions, ginger and garlic and sauté over medium heat till it’s fragrant. Add the shredded chicken, seasoning and salt. Stir fry till it’s almost ready. Now, add the carrots, diced peppers, green beans. Stir fry for a minute then, add the rice. Stir till it’s heated through. Finally, add the cubed pineapple and the scrambled eggs. Once it’s combined, turn off the heat and Serve hot.
