Puff puff is a popular street food that can be eaten as breakfast or snack. It is, however, not peculiar to Nigeria. It is actually popular in other West African countries, and those countries have different names for it. Puff puff is quite easy to prepare. It can be sweet or spicy. Today, I’ll be sharing the recipe for spicy puff puff with you.

Ingredients
2 cups of all-purpose flour
2 teaspoons of yeast
1 teaspoon of ground nutmeg
Half cup of sugar
Fresh pepper
Vegetable oil
Half teaspoon of salt
Lukewarm water
How to Prepare
Sift flour into a sizeable bowl. Add the ground nutmeg, sugar, salt, and powdered yeast.
Dice fresh pepper to suit your taste, and add to the dry ingredients. Next, add lukewarm water a little at a time and mix till you have a well combined batter. I prefer hand mixing for puff puff but you can use a mixer or a cooking spoon to mix.
Aim for a smooth batter of medium consistency, one that shouldn’t be too thick or too watery. Cover the bowl with aluminium foil or a clean kitchen cloth. Leave the batter to rise. After about 45 minutes to one hour, your batter would have increased in size.

Pour vegetable oil into a clean pot. Bear in mind that puff puff requires deep frying so the oil should be three inch deep at least.
Allow the oil to heat up and when it does, do a little heat test with a tiny batter. If the batter sizzles and floats atop the oil, then the oil is ready for frying.
Scoop the batter with your fingers and drop into the oil. Scoop more batter into the pot of oil but avoid overcrowding it.
Fry both sides of the balls until they’re golden brown. Scoop them into a paper-lined sieve and put a fresh batch of batter into the pot to fry. When you’ve exhausted the batter, turn off the heat.
Your puff puff is ready and will best be enjoyed with a chilled drink.
