  On our menu today is Macaroni. I call this food the sister of Spaghetti. This food is easy to prepare. Minimal or maximal ingredients can be used in its preparation. Today’s recipe was prepared with orisirisi. That’s why I said the Macaroni wey go school.

Before I’ll tell you how I prepared this food, let me mention this. I usually have fresh tomato and pepper paste in the freezer. That’s why you won’t find blend or cut tomatoes and pepper in today’s recipe. I just brought out my blended tomato mix and I used a microwave to defrost it.  But if you don’t have fresh tomato paste as I did, either blend yours or use canned tomatoes.

Method Of Preparation

As you already know, the first step in food making is preparing the ingredients. So, peel, rinse and dice the onions. Scrape, rinse and dice the carrots. Deseed the green bell pepper. Rinse it and the green beans and dice them. Hard boil the eggs, transfer them into a bowl of cold water then peel when they are cool. Set all ingredients aside for later use. Put water in a pot to boil. When it comes to a boil, pour the Macaroni into it. Add some salt and allow it to boil for seven minutes. When the allotted time is up, your Macaroni would be soft but firm. Drain it and set it aside for later use. Set a clean saucepan on medium heat. Pour vegetable oil into it. When it heats up, add minced ginger and garlic. Saute for a minute. Pour the minced beef into the saucepan. Use a wooden spatula to break it up. Add curry, thyme, seasoning cubes and salt to the meat. Stir fry till the beef loses its pink colour and changes to brown. Scoop the meat into a bowl; while transferring the meat to the bowl, leave as much oil as possible in the saucepan. Set the minced meat aside for later use. Place the saucepan back on medium heat. When the oil heats up again, add onions to it and sauté for a minute. Add the blended tomato and pepper paste to the saucepan. Also add the minced garlic, thyme and curry powder. Stir the content of the saucepan and fry on medium heat for at least fifteen minutes. Add seasoning cubes and salt to taste. Add the green beans, green bell pepper and carrot. Stir the pot and allow its content to cook for two more minutes. Add the Macaroni and the minced meat into the saucepan and stir thoroughly. Taste the food and adjust seasoning, if need be. Cover the saucepan and allow its content to simmer for a few minutes. Turn off the heat. Rinse, peel and dice the dodo. Heat up vegetable oil in a separate saucepan. Fry the dodo till it’s golden brown. Scoop them out of the oil into a paper-lined sieve. Serve your Macaroni wey go school with dodo, boiled egg and any chilled drink of your choice.
