Recipe For Groundnut Cookies

 

Lately, we’ve been making a lot of cookies at home. My son calls them “Kuku” and he can’t seem to get enough of them so I have added “Kuku” baking to my supermum duties.

A couple of days back, I roasted some groundnuts at home. After peeling and bottling them, I started thinking of peanut recipes. As expected, the first to come to mind was cookies. So, I made some and boy oh boy! It was the best thing ever.

Ingredients

2 Cups of Roasted Groundnuts

1/2 Cup of All-Purpose Flour

1/4 Cup of Sugar

A Teaspoon  of Salt

How To Prepare

Peel the roasted groundnuts. Pour them into a food processor and blend till you have a thick, smooth puree. Transfer the puree from the food processor to a sizeable bowl. Sieve the flour, sugar and salt into the bowl of pureed groundnut and mix till a smooth dough is formed. Cut a small dough with your hand and make a ball with it. Drop the ball on a baking tray and flatten it with a fork. Scoop and form balls with the remaining dough. Bake the dough in a preheated oven till it’s golden brown. Take the cookies out of the oven. Allow cooling then serve and enjoy them alone or with tea or cold drink.
