Carrot soup is a healthy delicious soup prepared with carrots as it’s the main ingredient. This soup is high in fibre, low in calories and very filling. It also makes for a very quick meal. It’s quite good on its own or you can pair the soup with bread. I’m not very sure it’ll go down well with swallow (:D), You can try it and let me know how it goes.
Ingredients
- 1 tablespoon of extra virgin olive oil
- 1 medium onion, chopped
- 1 stalk of celery, chopped
- 1 teaspoon of thyme
- 2 cloves of garlic, chopped
- 5 cups of chopped carrots
- 2cups of water
- Freshly ground pepper
- ½ teaspoon of salt
- 4 cups of chicken stock
Directions
- In a medium sized pot, over medium heat, heat the olive oil for 10 seconds. Add the chopped onion and celery let it cook for 4-6 minutes stirring occasionally. Add thyme and garlic and stir for about a minute.
- Stir in the carrots and ground pepper. Add water and stock, bring to a lively simmer over high heat. Reduce heat and let it simmer for about 25-30 minutes or until the carrots are very tender
- In a blender or food processor, puree the soup, return to pot and let it simmer for an additional 30 minutes
- Serve, enjoy.
