10 Simple Breakfast Options Made in 15 Minutes or Less

Breakfast is the most important meal of the day, so you can’t afford to joke with choices when it comes to taste and nutrition.

Throw out the cereal and try one of our handpicked easy-to-make breakfast options outlined below. Many of them take less than 20 minutes to prepare before dashing off to work and school.

1. Fruit salad:

Ingredients: Red/green apples, bananas, red/green grapes, strawberries

Preparation time: 15 minutes

Recipe: Nicely cut up pieces of apples, bananas and a handful of grapes and strawberries, mix them up and you’re good to go. Pineapples may be yummy ingredients but cutting them up takes time, so we’ll let them go for now.

2. French toast:

Ingredients: 2-3 bread slices, 2 eggs and melted sugar or honey to taste

Preparation time: 10 minutes

Recipe:  Shallow-fry a couple of egg-soaked bread slices and garnish with delicious honey.

3. Toasted sandwich:

Ingredients: 4 bread slices, butter, 1 tin of corned beef or 2 eggs

Preparation time: 15 minutes

Equipment: Sandwich toastmaker

Recipe:

  • Grease up insides of machine with butter to avoid bread from sticking
  • Lie flat two slices of buttered bread and add chunks of corned beef for a filling or egg whites and yolks
  • Place an additional slice on top each one and close up machine.
  • Leave to cook for 10 mins

4. Indomie: 

Ingredients:

  • Indomie packs (1 or 2)
  • 1 tin of corned beef or egg for garnishing

Preparation time: 10 minutes

Recipe:

  • Pour noodles into boiling water and add spices when soft (you can also include a dash of hot pepper).
  • Corned beef or eggs can be stirred in when it’s almost done. Leave to cook for a few minutes and serve.

5. Plain/flavoured custard:

Ingredients:

  • 200ml double cream
  • 700ml whole milk
  • 4 large egg yolks
  • 3 tbsp cornflour
  • 200g caster sugar
  • 1 tsp vanilla extract

Preparation time: 15 minutes

Recipe (make-from-scratch):

  • Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.
  • Wipe out the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon (see Steps 1 and 2, for stirring tips) until the custard is thickened, but before any lumps form. Eat hot or cold.

6. Pap (ogi or akamu):

Ingredients:

  • Wet Corn Starch
  • Water (Hot and Cold)
  • Evaporated Milk
  • Sugar (to taste)

Preparation time: 15 minutes

Recipe:

  • Put some lumps of raw pap (wet corn starch) in a big bowl to accommodate eventual rising
  • Crush the lumps of pap into very small pieces with a tablespoon
  • Mix with cold water in small quantities till you have a medium consistency
  • Pour in boiling water slowly but steadily in a circular motion, stirring in the process
  • Stop stirring and reduce the flow of water you are pouring till the pap has completely set.
  • Add evaporated milk and some sugar to taste

7. Agidi or Eko:

Ingredients:

  • 1 cup corn flour (corn starch)
  • 700mls (approx. 25 fl. oz. ) cold water

Preparation time: 15 minutes

Recipe:

  • Mix the corn starch/flour with the 700 mls of cold water in a pot.
  • Stir continuously with a wooden spatula even after it thickens to prevent lumps
  • Pour some water into pot and leave to simmer for about 10 minutes while covered on medium heat.

8. Club Sandwiches:

Ingredients:

  •  4 slices of bread
  • 2 sardines
  • 1 fresh plum tomato
  • 1 medium carrot
  • ¼ small cabbage
  • 2 tablespoons mayonnaise or mayonnaise

Preparation time: 15 minutes

Recipe:

  • Clean and slice up vegetables neatly
  • Mash sardines separately with a fork and mix with the margarine/mayonnaise.
  • Add vegetables to mashed sardines and stir thoroughly
  • Spread your freshly prepared sardine-veg filling in between slices of crustless bread.

9. Bread and scrambled eggs:

Ingredients: 2 eggs, 1 tablespoon of milk, frying oil, salt to taste

Preparation time: 10 minutes

Recipe:

  • Beat egg whites, yolk and milk in a plastic bowl and season with salt
  • Pour into frying pan and stir gently with spatula as it thickens.
  • Leave to cook for a couple of minutes, and you’re good to go with a loaf of hot, fresh bread

10. Hotdogs:

Ingredients:

  • 2 frozen Frankfurters
  • 2 hotdog buns
  • 2/3 tomatoes
  • Ketchup for taste

Preparation time: 5 minutes

Recipe:

1. Heat up frozen frankfurters in a microwave for a couple of minutes. Alternatively, you can steam it up in boiling, hot water for 2-3 minutes

2. Chop up tomatoes into neat slices

3. Place frankfurters and tomato slices into buns and top up with some ketchup. Voila!
