Jollof spaghetti is a particularly all-time favorite for extremely busy people (especially students) because like cooking noodles, or making bread and egg, or soaking garri, it is a pretty fast and easy meal thanks to its pasta origin. Outlined below is an easy stress-free recipe, culled from 1Q Food Platter.

Ingredients

Half pack of spaghetti 2 tablespoons of tomato puree (popularly known as tinned or sachet tomato) 2 cooking spoons of blended tomato, pepper and onion (ensure that the mixture has previously been boiled dry). Half medium sized onion (chopped). Any meat of your choice. Half cooking spoon filled with vegetable oil. A pinch of thyme. 1 teaspoon of curry. A quarter cup of green peas and any veggie of your choice (preferably carrots, green beans etc) Any seasoning cube of your choice. Salt to taste.

Instructions

  • Cook the meat.
  • Place a pot on fire, allow to heat.
  • Add oil and fry the already chopped onions till it becomes translucent.
  • Add tomato puree and fry for 5 minutes till red color is extracted. Make sure to keep stirring to prevent burning.
  • In a separate pot, boil the spaghetti.
  • Make sure it cooks but does not get soft.
  • In the previous pot, add the blended mixture of onion, tomato and pepper.
  • Add the meat, curry, thyme, seasoning cube into the tomato paste mixture.
  • Stir and continue frying, till sauce dries and oil starts to separate from the tomato.
  • Taste the sauce for taste.
  • Add spaghetti into the pot.
  • Stir well to coat with sauce. Make sure to lower the heat and cook.
  • Add 1 or 2 tablespoon water to cook.
  • Add the vegetables and allow to simmer for 5 minutes.
  • Your delicious spaghetti is ready.
