Recipe For Carrot Buns

Festivities like Easter are a great time for families to relax and spend time together. As such, tasty snacks like the carrot buns on our menu are needed to add flavour to conversations and spice up family games or movie time. Here’s the thing, not every member of your family would understand the need to bond. But when you have holiday specials like these carrot buns, it’ll keep things interesting and it may be the magic that will keep your nonchalant relatives at home with the rest of the family.

Today’s recipe is Nigerian buns with a twist. The carrots bring a different flavour to this delightful snack. Carrot buns are the perfect Easter snack, one that your family would love. This recipe is another great way to incorporate carrots, one of the foods for the Easter bunny, into your diet. Ingredients 3 Large Carrots A Large Egg A Cup of Milk 1/2 Cup of Sugar

2 & 1/4 Cups of All-Purpose Flour 1/2 Teaspoon of Nutmeg/ Cinnamon 1 & 1/2 Teaspoon of Baking Powder 1/2 Teaspoon of Salt Method of Preparation Clean carrots if dirty. Afterwards, rinse and put them in a clean blender. Add eggs, milk and sugar to the blender jug. Cover it and blend till smooth. Set aside for later use.

Sift flour into a sizeable bowl. Add baking powder, nutmeg and salt to it. Mix the dry ingredients together. Pour the wet ingredients into the dry ingredients and mix till all the ingredients are well combined. Place a clean pot on medium heat. Please note that a generous quantity of oil is needed for deep frying. My simple hack for buns and puff puff frying is to use my small pot. The quantity of oil I use for deep frying with this pot is nowhere near what I’d use if I was using a larger pot. That said, once the oil is hot, scoop some of the batters into it and deep fry till golden brown. Transfer the carrot buns from the oil into a paper-lined sieve.
