Recipe For Banging Steamed Vegetables

Today’s recipe upgrade is a banger but before we get into that, let me ask you an important question. When last did you eat vegetables? Nigerians love their leafy green vegetables. They use them to make soups and sauces. Sometimes too, these vegetables are steamed, boiled or made into a stir fry. When this is the case, it is either enjoyed alone or served as an accompaniment to main dishes like boiled yam or a rice meal.

Today’s recipe is a modification of the Simple Steamed Vegetables. That’s why I call it the banging steamed vegetable. The principal ingredient used in making this food is green amaranth which is popularly known as ‘green’ in Nigeria. However, this vegetable can be substituted with any leafy green vegetable of your choice. The shredded chicken took the taste of this food to a whole new level.

Ingredients

Onion

Green

Shredded Chicken

Garlic

Vegetable Oil

Method of Preparation

Peel the onions. Rinse the onion and scotch bonnet pepper; afterwards, dice them separately. Mince the garlic and set the prepared ingredients aside for later use. Pluck the vegetable. Rinse thoroughly to get rid of sand then slice thinly. Set aside for later use as well.

Pour vegetable oil into a clean saucepan. Add the diced onion to the saucepan and sauté for a minute. Add the shredded chicken, minced garlic, pepper, seasoning and salt to the saucepan. Stir fry the chicken till it loses its pinkish hue. Add the sliced green vegetable and stir well to combine. Steam on very low heat for eight minutes. Give it a final stir then turn off the heat.

Serve and enjoy while it’s hot.
