While I was growing up, this drink was quite popular. At home, Big Mummy made gallons of it and stored it in the refrigerator for our refreshment. It was sold in school and it was served at birthday parties.The ingredients for making this drink are few and readily available.

How to Prepare
The first step in making this drink is to rinse off the dust in the Zobo Flowers. Don’t worry if it seems like you are washing off the colours in the flowers. When you’re done rinsing, you’ll find that the flowers have their colour intact.

Wash, peel and slice the pineapples thinly. Let me mention at this point that even though some people add pineapple peels to their Zobo Drink, I have never attempted it and I have no desire to do so. Peel the ginger and either pound it or cut it into tiny pieces. Put the Zobo Flowers in a clean, big pot. Add the pineapple slices to the pot and then add lots of water. The water should cover the contents of the pot. Start cooking on medium heat. After about ten minutes, add the ginger. Please note that the contents of the pot should boil for at least thirty minutes. This will ensure that the Zobo Flowers and the pineapples are completely soft. Turn off the heat and allow to cool.
When it’s cool, use a sieve and your hand to wringe out the juice in the pineapple and the flowers. When you are done, sieve again to ensure that no particle is left in the juice. Your Zobo Drink is ready. Pour it into bottles and refrigerate. Serve cold.
