When making this food, I usually boil the rice and marinate the protein. I prefer shredded chicken; so, I seasoned it with curry, thyme, paprika, pepper, salt, two tablespoons of cornflour the night before. I also prepare the veggies at night too. So, what I do in the morning is to scramble the eggs, stir fry the rice, my protein of choice and veggies in my non-stick pan and voilà! The delicious pineapple fried rice is ready.

Method Of Preparation
Break the eggs into a soup bowl and beat it. Preheat some vegetable oil in a clean non-stick pan. Pour in the eggs and scramble. When it’s ready, scoop it out and set it aside for later use. Pour the remaining vegetable oil into the pan. When it heats up, add the diced onions, ginger and garlic and sauté over medium heat till it’s fragrant. Add the shredded chicken, seasoning and salt. Stir fry till it’s almost ready. Now, add the carrots, diced peppers, green beans. Stir fry for a minute then, add the rice. Stir till it’s heated through.
