Today’s recipe was carefully chosen with the new year plan in mind. It’s so delicious that it won’t last a day in your house. Iru sauce is mostly enjoyed with local rice. It’s easy to prepare. Thus, you can even cook it in the morning for children’s school lunch.
Ingredients

Directions
Clean the meat properly to eliminate sand and nyama nyama. After cleaning, put the meat in a clean pot. Season it with onions, pepper, seasoning cubes and salt. Add some water then cook on medium heat till tender. Peel, rinse and dice the onion. Set it aside for later use. Remove the seeds in the red bell pepper and rinse it, the scotch bonnet pepper and the red chilli pepper. Afterwards, put them in a clean blender and blend roughly. Pour the blended ingredients into a clean pot and boil on medium to high heat till the water content is removed. When that is achieved, take the pot off the heat. Bleaching palm oil is the next step. So, get a clean dry pot and pour some palm oil into it. Cover the pot and set it on high heat. Now, here are two things to note about bleaching. The first is that it is best done in a ventilated kitchen. Therefore, you should ensure that your windows are open; this is to prevent choking. The second thing to note is that bleached palm oil looks like vegetable oil. It usually takes about ten minutes to achieve this. Once that is done, turn off the heat. Allow the oil to cool down. Please, do not remove the lid of the pot till the oil is completely cool. Check the oil. If it’s cool and you bleached more oil than you require, decant some. Place the pot on medium heat again. Add the diced onions, the dry fish, meat and fry for about ten minutes. Add the pepper blend and locust bean. Stir fry for another ten minutes. Add the meat stock and crayfish. Stir and taste. If you need a seasoning cube and salt, add it at this point. Cover the pot, turn down the heat. Allow it to simmer for about fifteen minutes then turn off the heat.
