How to make Plantain Pancakes

I love plantain and I can eat them every day, 🙂 so I get excited when I find new ways to enjoy them. Plantain and bananas are similar but plantains are starchier and are usually not eaten straight up like bananas; they have to be cooked first. Plantains are curvier in shape and have thicker skin. They take days to ripen and can be bought at any stage of ripeness. Plantain helps boost the immune system, regulate digestion and are rich in potassium. They are also a solid source of carbs with low-fat content. Plantain pancakes are totally delicious, simple, easy and quick to make. It’s just excellent for breakfast, lunch or dinner and can be enjoyed with maple syrup, coconut butter or any spread you have. Ok, enough talk. LOL. Here’s the recipe: Ingredients 2 very soft over ripped plantains ½ cup of all-purpose flour 2 raw eggs 3 tablespoon of milk (evaporated, condensed or powdered) 1 tablespoon of sugar ½ teaspoon of baking powder Vanilla powder ½ Nutmeg ( grated) optional A pinch of salt 2-3 tablespoon of coconut oil for frying or vegetable oil Directions Wash and peel the plantain, removing the black skin. Then chop and mash the plantain until without lumps. It’s easier to blend the plantains or you can mix the mashed plantains with a little water, pass through a sieve and thoroughly mash out any lumps with a spoon or fork. Break the eggs into a bowl, add the milk, sugar and mashed or blended plantain and whisk together thoroughly. Add the grated nutmeg and the pinch of salt. In another bowl, sieve in the flour and mix with other dry ingredients. Combine them well. Then make a hole in the middle of the flour bowl and pour in the plantain egg mixture little by little and thoroughly mix them, add a little water if it’s too thick. Make sure the batter has a running texture but not watery. Heat a large skillet over medium-low heat, and add a little oil In the pan enough to grease it. Tilt the pan so it can go round and let it heat up. Then gently scoop the batter using a soup spoon into the oil. Let it fry for 3 minutes before you flip to the other side. Do this until batter is gone. Serve with maple syrup or butter.
