How To Make Water Yam Fritters

One of the best parts of growing up was waking up to the aroma of Water Yam Fritters. Water yam fritters is popularly called Ojojo and it is common to those living in Ijebu, a hometown in the Western part of Nigeria. It is a good meal to serve to the whole family. Water yam or, “purple yam”, is the species most widely spread throughout the world and in Africa is second only to white yam in popularity.

Health Benefits

Water Yam contains Total dietary fibre which makes it suitable for the management of pile, constipation and diabetes. It is also  a rich source of carbohydrate and contributes to vitamins and minerals, especially where it is consumed in large quantities. It is rich in Vitamin C, Vitamin E, calcium, potassium, magnesium and antioxidants.

Ingredients

1 tuber of water yam Onions (chopped) Chili pepper Salt to taste Seasoning cubes Crayfish Vegetable oil

Instructions

Peel the skin of the water yam using a knife Slice the yam into small chunks and grate into a bowl Add seasoning cubes, salt and crayfish in that bowl of grated yam Next, heat oil in a frying pan Gently add drop into the frying pan (similar to puff puff direction).
