Learn a Skill Wednesday: How to Make Ofada Rice and Ayamase Sauce

Most people know about the famous ofada rice, but few know how great ofada rice tastes with the ayamase sauce. Ofada rice is the locally grown rice in Nigeria and typically, you have to pick it to remove stones. Thankfully, there are companies out there who sell packaged ofada rice that don’t need to be picked out.  However, if you are buying it locally, remember to pick out the stones. Here is the recipe for this excellent indigenous meal: Ofada Rice Recipe Ingredients: Preparation:
  1. Pick the Rice
  2. Boil the water
  3. Wash the rice thoroughly after picking
  4. Add rice to boiling water, parboil for about 15 minutes
  5. Pour the rice into a bowl, wash thoroughly
  6. Put it back in the pot. Add some salt and clean water. Let it boil till it is soft.
  Ayamase Sauce Recipe Ingredients: Preparation:
  1. Wash the meat thoroughly and boil with seasoning and salt to taste. Add some Cameroon pepper while you boil the meat to give it a unique taste.
  2. Let the meat boil till tender. Ensure there is a little stock in the boiled meat.
  3. Grind the green pepper, red scotch bonnet pepper/ habanero pepper and onions together.
  4. Boil the ground pepper for 15 minutes.
  5. Put a pot on fire, add palm oil. Let the palm oil bleach.
  6. Once the palm oil is bleached, pour the ground pepper and let it simmer
  7. Add the meat and the meat stock.
  8. Add the ground locust beans.
  9. Add some crayfish.
  10. Taste the sauce to be sure of the amount of seasoning needed. Then add salt and other seasoning to taste.
  11. Let it simmer for about 15 minutes.
  12. When the palm oil starts floating, it is ready.
