So playing around with food is the best way to spend the weekend. Do we all remember the garri cake we made for ourselves while growing? Don’t worry, this is not as crazy. Did you know you could make Tiger nuts pancake? Wondering what Tiger nuts are? Hearing the name it’s easy to think it’s a nut. But it’s not, it is a tuber. It is known as Ofio or aki Hausa by the Igbos, the Hausas call it “Aya”.
Well, I stumbled on recipe online and decided to try it out; be bold and try it as well. Here is how to make Tigernuts pancake:
First, we have to make Tiger nuts flour:
Get your nuts and soak into the water for 24 hours. As soon as you extract the milk you need, you will have to dehydrate the tiger nut pulp. Preheat your oven to 70-80 C / 160-175 F, then spread the pulp over a large baking tray and place in the oven. Dehydrate for 4-6 hours or until dry. Mix a few times during the dehydration process or just buy stored products from an
online store or in local stores across you. (Well, I simply allowed mine dry on a warm sunny spot in my kitchen.)
Once it dried (not browned), I blended it using a dry blender; you can also use a food processor till it becomes powdered.
Why Tiger Nuts Flour? It’s good way to substitute bread flour for vegetarians. It has high natural sugar hence you do not need to add extra sugar, a good option for those with diabetics, and it has high fiber content.
You make it just like regular flour pancakes but you substitute with newly made tiger nuts flour
Ingredients
½ cup Tiger nut flour
¼ tablespoon of Baking Powder/Baking Soda.
¼ cup of Milk
2 Eggs
Melted Butter
Salt to taste.
Method:
Mix your flour, salt baking powder in a large bowl. Add your milk and eggs with melted butter. If you notice the tiger nuts flour is still lumped, loosen up with a fork.
Stir everything together until it is smooth.
Get an oiled fry pan over the heat, scoop your batter into the frying pan. Make sure each edge is coated brown, repeat the process over and serve hot.
