Pineapple bread is one of a million ways to enjoy the super fruit that is pineapple.

The Pineapple bread is moist and very delicious, and can serve as a breakfast meal, when matched together with coffee, or it can just serve as a treat. Either way, it is something you and your family will definitely love.

Yield: 2 loaves
Ingredients
½ cup of butter
1 cup of sugar
2 cup of all-purpose flour
3 eggs
½ teaspoon of baking powder
½ teaspoon of salt
1 cup of crushed pineapple
Greek yoghurt (Optional)
Directions
Preheat the oven to 350 ℉
Grease and flour two loaf pans
In a small bowl combine flour, baking soda and salt; set aside
Cream butter and sugar in a large mixing bowl until light and fluffy
Beat eggs, one at a time, whisking and incorporating them well before adding the next
Alternatively add the flour and the Greek yoghurt if you decide to use it, beginning and ending with the flour.
Fold the pineapple into the batter
Pour into already prepared pans.
Bake for 30 minutes, cover bread with foil, and bake for another 30 minutes
Cool bread in pan for 2 minutes before removing from the pan.
