I have two favorite recipes: Fudge Brownies and Chocolate Chip Cookies. Why? Because they’re easy and fast to make. I usually have the ingredients already in the house, and I’m a lover of anything chocolate.
This article will be about Fudge Brownies because they’re cheaper to make.
In the original recipe, it calls for unsalted butter but seeing as that is really expensive in Nigeria, I substituted margarine for it and omitted the salt because margarine has enough salt on its own.
Ingredients
Unsalted Butter or Margarine – 1 cup (250g)
Vegetable Oil – 2 TBSP
Sugar – 2¼ cup
Eggs – 4
Vanilla – 4 tsp
Flour – 1 cup
Cocoa Powder – 1 cup
Salt (if using unsalted butter) – ½ tsp
Instructions
Preheat the oven to 160°C. Pour margarine and oil into a bowl and place the bowl over a bigger pot of boiling water. Turn the margarine and oil together until margarine is melted. Take the bowl off the heat.
Pour sugar into the margarine mixture and whisk until well incorporated.
Pour in the eggs and vanilla one at a time, making sure each is incorporated before adding in the next. Whisk thoroughly for 1-2 minutes.
With a spatula, fold in dry indredients until batter is smooth and thick.
Pour batter into a 9 x 13 inch greased pan, dusted with cocoa powder. Tap the pan against counter surface to smoothen out batter and remove bubbles in batter.
Place in oven on middle rack and bake for 25-35 minutes
Let it cool and enjoy!
