125g butter
½ cup of Sugar
1 cup of flour
¼ cup of currants
Pinch of salt
2 cups of cornflakes crushed to fine powder
Baking powder
Milk
Vanilla essence
Directions
In a bowl, combine butter, vanilla essence and sugar. Whisk till creamy.
In another bowl, add flour, baking powder and salt. Mix very well
Add ground corn flakes, sugar-butter mixture, mix very well
Add milk and currants and knead the flour very well to make a soft and smooth dough
Divide the dough into 12 equal parts, roll it up to a buns size then flatten it out to give the cookie shape. Coat the dough in corn flakes powder
Bake the cookies in a preheated oven at 170c for 20-30 minutes
