Avocado is an interesting fruit. It is creamy, rich in vitamins, antioxiants and monounsaturated fatty acid. It is used in cooking a variety of dishes. The fact that oil can be derived from this fruit is an added advantage. Avocado oil has the same health benefits as the fruit. It has a mild flavour too; as such, it can be used in making a number of delicacies.

How to Prepare

I used 15 avocados for this batch of oil. Please note that the more avocados you use, the more oil you’ll get. Also, the more ripe and soft the avocados are, the more oil you’ll get out of it.
  1. Rinse the avocados and cut each one into two parts. Remove the seed and the lining left in the pit. Get a clean bowl and scoop the fleshy pulp into it. When you have removed the pulp from all the avocados, dispose the seed and the peels.
  2. Next, put the fruits in a blender. Blend the avocados into a smooth paste.
  3. Scoop the paste out of the blender jug into a non-stick frying pan. Place the frying pan on the gas cooker and set it on medium heat.
  4. Stir the avocado puree every few minutes. When it begins to boil, the oil will start coming out of the pulp. Don’t bring it down at this point oh!
  5. Just keep cooking and stirring the pulp till the colour changes from light green to dark green or brown. At this point, its water content would have evaporated.
  6. Turn off the heat. Get a clean cheese cloth; spread it over a soup bowl and scoop the brown avocado paste into it.
  7. Pull the corners of the cheese cloth together and start squeezing. You’d notice the oil coming out in drops. Keep squeezing until all the oil in the paste has been expressed.
Store the oil in an air tight container and use it whenever you want to.   Reference  Better Homes and Gardens Featured Image Source: Shutterstock
