Now, when we do reunite with the parents, let’s not spend all that time gisting with them. Let’s cook healthy meals for them, take care of them and show them, love. This way, they won’t just see us but feel us. One of the healthy meals that we can make for our parents this holiday is unripe plantain swallow. Unripe plantain is rich in iron, folate, calcium, antioxidants. It’s great for diabetics. It improves digestive health and promotes weight loss. Most of our parents love to swallow and soup. Most of them are diabetic too. Yet, they are not particularly conscious of their diet. So, while you are at home, teach them to take their diet seriously. You can begin by showing them how to prepare this meal

How To Prepare

Rinse and peel the plantain. Chop them into small bits and put them in a clean blender. Blend till you have a smooth puree. Transfer the plantain puree into a sizeable pot and set it on medium heat. Start stirring with a wooden spoon. Let me mention here that if you want smooth fufu, then, you have to stir the plantain puree continuously. When it thickens, stop stirring. Use a spoon to scrape the plantain from the sides of the pot. Add half a cup of water to the pot. Cover the pot and let its content cook till the water in it dries up. Use your wooden spoon to give the plantain swallow one last thorough stir and turn off the heat. Scoop the swallow directly into a plate or wrap in cling film and put it on a plate.
