On our menu, today is Irish potatoes frittata. I love this food and I consider it a winner because it meets my four breakfast requirements. It’s quick. It’s easy to prepare. It’s delicious. Most importantly, my son loves it. So, I don’t have to sing, dance and beg the little man to eat so early in the morning.

Irish potatoes frittata is another great way to eat Irish potatoes. If you haven’t tried it before, it’s about time you did.

Ingredients

3 Medium Sized Irish Potatoes

Small Onions

3 Eggs

Curry

Thyme

Green Pepper

Scotch bonnet Pepper

Seasoning Cube(s)

Salt

A Cooking Spoon of Vegetable Oil

How To Prepare

Put some water in a clean pot and set it on medium heat.  While waiting for it to boil,  peel, dice and rinse the Irish potatoes. Peel and dice the onions.  Rinse and dice the peppers (don’t forget to remove the seeds in the green pepper). Set all prepared ingredients aside for later use.

When the water comes to the boil, pour in the Irish potatoes. Boil on high heat for five minutes. Strain the water from the potatoes. Set it aside for later use.

Break the eggs into a bowl. Add onions, pepper, curry, thyme, seasoning, salt. Beat the eggs. Place a nonstick saucepan on medium heat. Add the vegetable oil to the pan. When it heats up, pour in the Irish potatoes. Pour the eggs over the potatoes.

Please, ensure that the potatoes are immersed in the eggs. Fry on one side till it  cakes and turns golden brown. Flip the eggs and fry on the other side till it’s golden brown as well. Scoop it out then serve and enjoy with tea, coffee, chocolate based drink or soft drink.
