Yesterday, in the part one edition of Must-Have Kitchen Ingredients this Christmas, I told you why you need to have these ingredients and I also listed six of them. If you missed that article, you’ll find it here. That said, we’ll briefly discuss the remaining five ingredients today. Even though you may not be into bulk buying, I think you should be able to make allowances for seasons such as this one when all we need is rest, rest, rest, no matter what.

Biko, go through the list to determine the ingredients that you don’t have or the ones that you don’t have in a reasonably large quantity so that you can buy them on your next trip to the market.

Palm Oil

This is another must-have ingredient in Nigerian cooking. Our soups, stews, ikokore, beans, ekpang nkukwo, yam pottage to mention but a few glow when this oil is added to it. Since jollof rice is not the only food you’ll cook this Christmas, you need palm oil oh! That’s why you shouldn’t forget to add it to your list.

Pepper

Even though this spice is a fickle friend, your food needs it anyway. So, buy it. If pepper is used well, it jazzes up the food but if too much is added, not everyone can eat it. So, the trick is usually to add a moderate amount that everyone can tolerate in the food while leaving some ground pepper in the pepper shaker for people like my husband wey no dey like food wey the pepper no loud.

Salt

This cheap ingredient is one of the most important in Nigerian cooking. A little is all the magic your food needs; use it well and it will bring out the taste in your food. Please, don’t forget to buy this ingredient.

Vegetable Oil

Not all Nigerian cooking is done with palm oil. Some require the use of vegetable oil. Just buy your preferred brand whether it’s sunflower oil, olive oil, turkey oil, soy oil. Needless to say, you’ll need it to cook this Christmas.

Canned Salad Ingredients

Oh yes, most families will prepare salad on Christmas and New Year days. So, if you plan on making a salad for Christmas, start buying canned ingredients like sweet corn, baked beans, green peas, and mayonnaise. If you have these, you can buy fresh ingredients later.
